Before you come
Give us a few extra minutes.
There is no line cook here and no heat lamp. One small team cooks every plate to order in the truck and carries it across to the patio. On a busy evening that means a longer wait than you would get somewhere with six people behind a pass.
If you are on a schedule, call ahead and we will have it ready for you. If you are not, sit outside, start on the chips, and let it take the time it takes.
